Pineapple Shrimp Fried Rice with Cashew Nut and Raisins

pineapplefriedriceI’ve never been very successful when it comes to making fried rice, so I set out to do some google research. They said the technique to prevent soggy fried rice is to use cold day-old rice straight from the fridge to the pan. I’ve decided to make pineapple fried rice instead of straight up plain fried rice today and we are pretty happy with the result. I even carved a bowl out of half a pineapple for serving, fun!

Direction

Heat vegetable oil in a pan, add chopped garlic, stir a couple of times.

Add shrimp, stir until they are cooked, remove from the pan and set aside.

Add sliced onion to the pan, stir until onion is half way cooked.

Season with fish sauce, Golden Mountain soy sauce, salt, pepper, curry powder, and a pinch of sugar.

Add pineapple and stir.

Add the cold rice and stir some more.

Add the pre-cooked shrimps, cashew nut, and raisins, mix well and serve.
